From Mexico to Australia: a year of bold new openings in 2025

Whether venturing around the corner to new neighbourhoods or further afield to cities in different countries, we’re thrilled to have opened our doors to new communities across the globe in 2025.

2025 was a year of momentum for Ennismore. The group arrived in Australia with Mondrian Gold Coast, Hyde Melbourne Place, and 25hours Hotel The Olympia Sydney; opened the first SLS in Europe with SLS BarcelonaMama Shelter’s expansion into Asia with Mama Shelter Singapore, and The Hoxton opened in Dublin – the first Ennismore hotel in Ireland. The All-Inclusive Collection celebrated key firsts with SO/ Ras Al Khaimah and SLS Playa Mujeres, while Ennismore welcomed Aliée Istanbul to the Paris Society Collection and expanded its iconic F&B venues, including Gigi Rigalatto, Mondaine de Pariso, Il Bambini Cub, Minim’s, Lana Lusa, and Cantina Valentina, to Rome, Istanbul, London, Paris, Dubai, and Dublin Below is a round up of some of our  most exciting openings of 2025. 

 

Ennismore goes down under 

2025 was a defining year for Ennismore down under, with three distinctive new openings across Australia. Hyde Melbourne Place brought the brand’s bohemian spirit to Australia for the first time, offering a vibrant, design-driven sensory experience that reflects the creative energy of Melbourne’s cultural scene. Mondrian Gold Coast introduced a new era of coastal luxury at Burleigh Heads, combining design-led accommodation, standout dining and relaxed beachside living, while also marking the group’s first branded residential address in Australia. 25hours Hotel The Olympia Sydney celebrated the building’s cinematic heritage with eclectic design, imaginative dining and art-filled guestrooms, creating a spirited playground for dreamers, explorers and culture lovers. Extending this momentum into Southeast Asia, Mama Shelter Singapore opened as the brand’s first destination in the region, arriving with unmistakable charm and a personality-packed spirit. 

 

Flagship openings in new destinations across Europe 

With the brand’s first-ever European opening, SLS Barcelona is set on the waterfront at Port Fòrum, the 471-room hotel combines opulent rooms and suites with six dynamic restaurants and bars, three spectacular pools, all framed by the Mediterranean Sea.  The Hoxton expanded across Europe with three new openings, united by the same core open-house spirit, with design-led interiors, relaxed social spaces, and a strong sense of neighbourhood connection. New hotels in Florence, Edinburgh and Dublin each brought that signature energy to life in their own way, shaped by local culture, creativity and community. Alongside them, Mama Shelter Zurich made a bold Swiss debut, arriving with playful design, vibrant colour and unmistakable personality at the heart of the city.

Strengthening All Inclusive in the Americas

Across the Americas, momentum continued with new openings, strengthening Ennismore’s presence in key gateway cities and resort destinations. Among the highlights, SLS Playa Mujeres expanded the SLS brand into a new all-inclusive resort destination, delivering elevated experiences, culinary creativity and high-energy social spaces along Mexico’s Caribbean coast. In addition, Ennismore accelerated its growth in the region by welcoming six new all-inclusive resorts in Mexico.

 

Regional firsts in the Middle East and Turkey

Across the Middle East and Turkey, 2025 was a year defined by ambition and scale. In Turkey, Aliée Istanbul arrived with contemporary flair and local relevance, crafted in collaboration with Paris Society to introduce elevated dining and nightlife experiences. Guests can enjoy everything from farm-to-table cuisine to creative open-kitchen dining with Michelin-starred chef Thomas Bühner.

In the UAE, SO/ Ras Al Khaimah debuted an all-inclusive first for the brand in the Middle East, creating a fashion-forward creative hub infused with artistry and bold self-expression. Adding to the region’s social energy, Mama Shelter Dubai marked a regional first, bringing Mama’s irreverent, welcoming spirit to the city with 197 uniquely designed rooms overlooking the stunning Business Bay skyline. The world’s first Mama Residences will also launch in Business Bay, offering fully furnished and serviced apartments that extend the brand’s playful, trendsetting energy—a new way to live, work and connect in the heart of Dubai.

Rixos continued its strong regional expansion, opening Rixos Obhur Jeddah in Saudi Arabia and extending the brand’s signature immersive, destination-led all-inclusive experience. A standout year for the brand also unfolded in Egypt, where Rixos Montaza Alexandria joined Rixos Radamis and Rixos Magawish, further strengthening Rixos’ global footprint with generous hospitality, diverse dining and entertainment designed for guests of every generation.

 

From city streets to island shores, creative hubs to nature-immersive escapes, our 2025 openings introduced new possibilities, fresh perspectives and new places to belong. We’re already looking ahead to an extraordinary 2026.
